Directions:

In a small-sized bowl, whisk the egg yolks and the cream. Set aside.

Heat the oil in a large-sized, deep skillet. Add in the bacon; cook for about 4 minutes, stirring, over medium-high heat until crisp. Add in the garlic; cook for about 1 minute, or until golden brown. Add in the spinach; cook until wilted. Add in chicken; cook for 5 minutes. Add in cooked spaghetti into the skillet; reduce heat to low, tossing, until coated. Gradually add the reserved pasta water, egg yolk-cream mix, and the tomatoes; toss for about 1 minute, until well coated with the creamy sauce.

Add the 1 cup of cheese and the nutmeg; season the pepper. Transfer to bowls. Serve with the extra cheese. Best served hot.
